"Cheesy" Hummus Quesadillas
As my first post ever on a blog, here goes something!
What I love about whole food plant based eating is how you can easily make your family favorites plant strong!
"Cheesy" Hummus Quesadillas: with black beans and rice (called Casados in Costa Rica, meaning 'married' because they go so well together and they eat them so often).
Ingredients:
8 whole grain tortillas
fat free hummus (I used the Aspen Grove recipe without the tahini or olive oil)
4 finely chopped green onions
salsa
On a preheated teflon skillet at medium heat, place 1 tortilla on it. Immediately put on about 2-3 T. of hummus, more for a cheesier taste. Spread to almost the edge of the tortilla, sprinkle on green onions and 1-2 T. of salsa, as you like it. Place other tortilla on top. Let cook for a couple of minutes until the bottom is nice and crispy. Turn over carefully and let cook another minute for 2. Cut in pizza shaped triangles and serve with no oil beans and rice. I also
Aspen Grove Hummus (I tweaked it a bit)
2 c. drained and rinsed garbanzo/chick peas (I pressure cook my beans and freeze them in 1-2 c. containers for future, quick and economical use).
1/2 t. salt
Juice of 1 lemon (or 2 T.)
1-2 minced garlic cloves or 1-2 t. jarred garlic
1 t. red pepper flakes (less if you don't like too much hot)
1/2 c. water (or a bit more or less depending on how you like your hummus)
Optional additions to your liking: 1/2 t. cumin, 1 T. chopped cilantro, 2 T. sun dried tomatoes or 2 T. chopped peppers or olives, 1 t. soy sauce or honey.
Place all in sturdy food processor or blender. Blend until desired consistency. Put or dip with anything!
Tropical Colada Green Smoothie (from Somer McCowan's cookbook "The Abundance Diet")
1 c. unsweetened plant based milk (I just use water)
2 c. packed spinach (I use whatever greens I have like Kale, and really smash more greens in)
1 med. orange, peeled (if you don't have an orange, use OJ or OJ concentrate)
1-2 medium ripe banana (I freeze mine)
1 c. fresh or frozen pineapple
1 T. dried unsweetened coconut shreds
water to consistency you like
stevia if you like it sweeter
Place all in high powered blender (or just use the regular kind and wait longer). It is a nice treat and everyone loves this.
